How can people get good digestive health?

Especially in the west, how can people who want to escape horrifically manufactured foods maintain good digestive health? These fake poisonous foods cause lots of health problems, but it's not like switching to something that says "organic" on it will do much for a person's digestive health. Ive been deliberately avoiding processed, artificial foods and obsessing over labels and ingredients, but I still have a timeframe between eating something and waiting a week before I shit it out. I definitely feel a bit anxious whenever I eat breakfast lunch and dinner, since that compounds itself each time and only makes the problem worse! Does anyone here have any particular advice or tricks they're employing in order to maintain excellent digestive health?
I used to struggle with this as well. How I fixed it: probiotics and fiber. I take 3 tablespoons of psyllium every morning on an empty stomach; 1 tablespoon in a big glass of water, wait 15-20 minutes, another tablespoon, and another. I also drink kefir and eat Greek yogurt. If you don't like kefir, just get a probiotic in pill form, it'll be even more effective. Other things that I've found helpful: 1 tablespoon of apple cider vinegar in a glass of water. Fresh lemon juice.
