Cyberix ...Here's a chocolate banana bread recipe
Batter should be muffin batter consistency. Thin-medium ribbons.
Use 3 bananas and the breads will turn out good and moist.
3/4c sugar, dark or light brown
2 large eggs
3 small bananas or 2 of the large straighter ones
sour cream 60g
1 teaspoon vanilla extract
virgin coconut oil (4 oz / 70g), liquidated
1 1/3 cups all-purpose flour (6.1 oz / 175g)
1 teaspoon baking powder (0.14 oz / 4g)
1 teaspoon Diamond Crystal kosher salt (0.11 oz / 3g)
1/2 teaspoon baking soda
1tsp cinnamon, ginger, nutmeg, any spices you want.
1/2c nuts, 1/2c chocolate chips, any you want.
350f 60-70min
Mix everything in order. Or, if you want the banana bread mega lifehack, put everything in a blender at once. You can blend all the liquids then add dries+toppings and finish by hand. Perfectly smooth homogenous batter.
Additionally you can add sliced bananas, oat crumble mix, or brown sugar on top before putting in oven.
Use a lower rack. Convection off. If it's too close to the top burner, you'll need a tin foil tent after about halfway through.
