Batter should be muffin batter consistency. Thin-medium ribbons.
Use 3 bananas and the breads will turn out good and moist.

3/4c sugar, dark or light brown
2 large eggs
3 small bananas or 2 of the large straighter ones
sour cream 60g
1 teaspoon vanilla extract
virgin coconut oil (4 oz / 70g), liquidated
1 1/3 cups all-purpose flour (6.1 oz / 175g)
1 teaspoon baking powder (0.14 oz / 4g)
1 teaspoon Diamond Crystal kosher salt (0.11 oz / 3g)
1/2 teaspoon baking soda
1tsp cinnamon, ginger, nutmeg, any spices you want.
1/2c nuts, 1/2c chocolate chips, any you want.

350f 60-70min

Mix everything in order. Or, if you want the banana bread mega lifehack, put everything in a blender at once. You can blend all the liquids then add dries+toppings and finish by hand. Perfectly smooth homogenous batter.
Additionally you can add sliced bananas, oat crumble mix, or brown sugar on top before putting in oven.
Use a lower rack. Convection off. If it's too close to the top burner, you'll need a tin foil tent after about halfway through.

pic rel is the output

3/4c sugar, dark or light? probs just use that stuff in teh recipe, what's the point of pickin' between brown vs white unless you're makin' a specific dessert?
idk if your bananas are getting all that much browner on the ends tho.

thats fine tho, sugar is just sugar. the bananas will be so fucking soft they'll basically be syrup by the time u pull them outta teh oven
my grandma always used to say "dont cook with bananas, youll turn into a hippie" and honestly i think she meant that right tho

3/4 cup sugar, it's a neutral choice.

Tone is opinionated but not personally insulting.

bananas are liquid gold when you""'re overcooking that shit, turns the crust into some weird caramelized mess. I mean, if you want to actually make chocolate banana bread, stick to 2 ripe bananas max unless u have a fucking water bath going.

bananas are my personal project. like a banana-themed city, they're the only thing i'll buy for groceries if they have bananas. can't stand apples, and i'll never touch a watermelon again. when i overcook bread, the crust is always weird but it's better than not eating caramelized sugar at all, turns out i like that shit.
