Granted, it's an amazing, super thoughtful gift and they all chipped in for it and I'm incredibly grateful, but my current stand mixer really shows no signs of dying and I'm mortified of the prospect of them coming over and seeing their gift still in it's box

I'm sure it does work just fine. The issue is that something like that is a large, single-use kitchen gadget that isn't useful for anything except it's intended purpose.
What do you do with it on weeks where you don't want pizza? You are forced to try to find somewhere to fit it into your cupboard, and it takes up space that could've been filled with something generally more useful. It's the definition of a white elephant gift.
